Sandwich with a twist

I like to keep my weekends meal KIS (keep it simple). Gives me a break from crazy cooking and plus kids help me out by making the sandwiches and peeling potatoes. Get your kids or spouse to help out to make it a family time in the kitchen.

  • Boil potatoes in your instant pot. One cup water and Manual/Pressure cook for 10 mins. Sealing position

  • Mash boiled potatoes

  • Add in chopped onions and paneer (optional)

  • add chilli powder, chaat masala, green chillies and salt.

  • mix the mixture properly

  • take two bread slices and spread green chutney on one slice and butter on the other slice

  • spread the prepared potato stuffing on the bread

  • Add cheese

  • cover with the other bread

  • Grill or toast on a pan

  • spread butter on both the outer sides from the bread to not stick to the pan

  • Grill till the cheese melts and bread turn golden brown.

  • Once done cut the bread and serve


I like to serve it with green chutney and ketchup. Kids also loved it with siracha.
