Sandwich with a twist

I like to keep my weekends meal KIS (keep it simple). Gives me a break from crazy cooking and plus kids help me out by making the sandwiches and peeling potatoes. Get your kids or spouse to help out to make it a family time in the kitchen.

Boil potatoes in your instant pot. One cup water and Manual/Pressure cook for 10 mins. Sealing position
Mash boiled potatoes
Add in chopped onions and paneer (optional)
add chilli powder, chaat masala, green chillies and salt.
mix the mixture properly
take two bread slices and spread green chutney on one slice and butter on the other slice
spread the prepared potato stuffing on the bread
Add cheese
cover with the other bread
Grill or toast on a pan
spread butter on both the outer sides from the bread to not stick to the pan
Grill till the cheese melts and bread turn golden brown.
Once done cut the bread and serve
I like to serve it with green chutney and ketchup. Kids also loved it with siracha.
