Paneer Butter Masala

This is a one pot paneer butter masala. I make this even when I have a big group of friends or family coming. This is ofcourse almost all kids favorite curry to eat with naan or rice.
To the inner pot of your instant pot, saute onions, diced tomatoes, chopped ginger, garlic.
Add in handful of cashews and saute for 10 mins. Press cancel.
Once done, you can use an immersion blender to puree the ingredients or use your vitamix to blend it. (Be sure to let it cool down or the hot flames will pop the blender jar).
Press Saute again on your instant pot and add oil, butter, red chilli powder, coriander powder, cumin powder, bay leaf and two cardamoms.
Let all the spices saute for couple of mins and pour in the puree back in your instant pot.
Let it simmer for couple of mins.
Close the lid of the IP and set valve to sealing.
Press the manual/pressure cook button and cook on high pressure for 5 minutes. Quick release the pressure.
Stir in the paneer cubes, salt and tsp of honey. Add chopped cilantro and kasuri methi and let the curry simmer for additional 2 minutes.
Serve instant pot butter paneer with naan or any bread of choice!
