Khichu - Papdi no lot

I have always been scared to make this on my own. Its a process to make and have never attempted it. I always wait till my mom comes to visit or when we go to Swaminarayan temple to eat this. I finally had the courage to try this in the instant pot and ya'll it is the most easiest and best way to make it.
Turn on InstantPot to SAUTE mode and wait until the display reads “HOT”
Add 3.5 cups water, carom seeds and cumin seeds to the pot
Add the green chilies, salt, baking powder and stir well
Simmer for 3-5 mins until the water becomes an amber color
Press “Cancel” on your Instant Pot to turn it off
In a large mixing bowl, add your rice flour(2 cups)
To the flour, slowly add in the water mixture and mix well until you get a loose dough
Grease three trays with oil
Evenly pour the batter into the trays and set up your trays in the holder, you can even do one tray at a time.
Pour 1 cup of water into the InstantPot
Place the stand or a plate in the InstantPot on a trivet
Close the lid and vent on lid to prevent steam from escaping
Set pot to MANUAL mode
Set to HIGH PRESSURE
Set timer to 15 minutes
Manually release steam by opening vent on the lid
Open the lid
Use an oven mitt to remove the tray holder
Carefully remove the trays - they will be HOT
Drizzle oil and sprinkle some red chilli powder
Serve the khichu using a spoon and enjoy with a hot cup of tea.
Khichu will harden as it sits.
